I'chiliad wanting to know if you can substitute jello gelatin for jello pudding in recipes? I'grand not sure what the gelatin does for recipes, aside from adding flavor. I believe the pudding adds density?

Powdered Jello gelatin is about 85% carbohydrate and 10% gelatin by weight. Weight of season/colour 5%. Main function in cake batter is like carbohydrate, and flavour/color come along for the ride.

Instant pudding mix has sugar and modified starch, harder to give proportions. Starch has been cooked and freeze dried to reconstitute into a pudding "instantly" and it grabs water every bit soon equally liquid is added. It holds the moisture amend in baked cake. Information technology as well decreases the effective gluten content causing a more tender block crumb.

NO they aren't interchangeable. The cakes volition be dissimilar.

It could depend on the recipe. If it'south a scratch recipe that calls for pudding, so no for reasons stated above. However if you are calculation it to a mix, then I have interchanged them successfully in the past to have dissimilar flavour combinations that I could not go with the puddings. I'm sure this is considering the cake mixes have and then much stuff already in there that the stability is not effected, but I don't actually know the science backside it for sure.

I have interchanged them in doctored mix recipes and had wonderful results. I was converting a lemon block to key lime. Since there is no cardinal lime pudding, I used lime jello, It was wonderful! Texture was almost the aforementioned as the original recipe and the flavour was amazing.

I know this is old, only I used a white cake mix, key lime yogurt, and lime jello. Worked out wonderfully! It was derived from the Cake Mix Md'southward Lemon Lovers cake.
